Linguine with Shrimp
This is a great example of how using homemade fresh pasta can totally transform a simple pasta dish that’s often made with plain old dried pasta. Large shrimp are cooked in olive oil, garlic, and a broth made from white wine and shrimp shells. Using handmade squid ink linguine adds umami complexity along with dramatic color and will take you straight to the Venetian lagoon.
Maltagliati with Weeknight Meat Sauce
Fresh pasta doesn’t have to be a company-worthy undertaking. With fresh pasta stashed in your freezer, everyday weeknight dinners are as easy as pulling a box of dried pasta from your pantry, but so much more delicious and satisfying. This recipe pairs one of the easiest pasta shapes there is (“maltagliati” means “badly cut”) with a quickly simmered tomato sauce enriched with meatloaf mix, pancetta, garlic, and onion.
Pansotti al Preboggion con Salsa di Noci
“Pansotti” means “pot-bellied,” but despite the folksy name, this is a pretty elegant stuffed pasta. Our homage to this traditional Ligurian dish uses a filling made from ricotta, bitter greens, and herbs (in its homeland, whatever greens are season are foraged and cooked). The sauce, which is made from walnuts, bread crumbs, Parmesan, and more herbs, is regarded by many as the precursor to basil pesto.
Dill Trofie with Smoked Salmon and Crispy Capers
This Scandinavian-inspired pasta dish sounds like something you’d order in a restaurant but only takes 30 minutes to prepare once you have your pasta made. The pasta itself is flavored with fresh dill, and the no-cook sauce includes smoked salmon, crème fraîche, lemon zest, and caraway seeds. Microwave-fried capers make a crispy, salty garnish.
