Over the past 20 years, renowned illustrator John Burgoyne has produced more than 150 intricate, hand-drawn illustrations for Cook’s Illustrated magazine. Now, for the first time ever, America’s Test Kitchen is proud to partner with Mr. Burgoyne and offer a select number of fine art prints featuring this iconic artwork.

Most of the tomatoes we are familiar with are hybrid varieties bred for easy shipping rather than flavor or texture. But over the past 20 years or so, many pre-hybrid "heirloom tomatoes" have been making a comeback. Adapted to grow in particular microclimates, they come in all shapes and colors, from the creamy Great White Beefsteak to the lemon-yellow Wonder Light and the brick-red Debarao. Instead of being "all-purpose," many of these heirlooms are ideally suited for a particular culinary use. The blood-red Moskvich, for example, matures early and has sweet flesh that is great for eating out of hand, while the creamy texture of the persimmon-orange Flamme makes it ideal for sauces, and the tart flavor of the lime-emerald Green Zebra is wonderful in salads.
