This knife was a showstopper in our tests of carbon-steel knives.

Many chefs and knife enthusiasts prefer carbon steel (a higher-maintenance alloy) to stainless steel for a harder and stronger blade that’s able to take on—and retain—a keener edge. We found this to be true of the Bob Kramer 8” Carbon Steel Chef’s Knife. Its razor-sharp blade, sloping ergonomic handle, and good looks make it both visually stunning and a pleasure to use.

With this knife’s “precise” tip and super-sharp, ultrathin blade, parsley “jumped to pieces” and whole chickens seemed to butcher themselves. More impressively, it maintained that edge throughout testing. Its ultracomfortable handle was also a gorgeous piece of craftsmanship.

We maintain strict objectivity in all testing.*

How We Tested Carbon Steel Knives

Seven test kitchen staffers subjected eight chef’s knives (with blades as close as possible to 8 inches in length), priced from under $100 to over $300, to a battery of kitchen tasks to assess sharpness, comfort, and overall performance. Scores from each test were averaged to get the overall rating.

Winning Traits

  • A thin blade that produced cleaner and more precise cuts
  • A strong blade with among the highest Rockwell scale rating, at 61 HRC
  • A comfortable blade. Testers loved the smooth, user-friendly handle on the Bob Kramer
  • Edge retention that maintained its supersharp edge throughout testing
