JB Print CookingGreens

Over the past 20 years, renowned illustrator John Burgoyne has produced more than 150 intricate, hand-drawn illustrations for Cook’s Illustrated magazine. Now, for the first time ever, America’s Test Kitchen is proud to partner with Mr. Burgoyne and offer a select number of fine art prints featuring this iconic artwork.

Not just a plate garnish, curly kale has an assertive, earthy flavor when cooked. Darker Tuscan kale (or black kale) has wrinkled leaves, which are more tender and delicately flavored. Collard greens are usually boiled or braised along with pork; their pungent flavor pairs well with rich meat and bean dishes. Peppery mustard greens come from the plant that yields the seeds used to make mustard. Beet greens, most often found with the bulbous roots still attached, are earthy and flavorful and do not have to be cooked much beyond a quick saute. They are closely related to chard, which has broad, crinkly leaves, prominent stems, and a slightly bitter, minerally flavor. Radicchio is not green at all but rather a tight head of burgundy leaves; it can be eaten raw but is also good grilled or sauteed. Mild, fresh-tasting escarole is good raw in salads and cooked in soups. Dandelion greens have a mildly bitter, tangy flavor; young, tender leaves are fine for salads, but mature leaves are better braised. Spinach, which has flat or curly leaves, requires little or no cooking.

ABOUT THE ARTIST

John Burgoyne was raised in Massachusetts, where he developed a passion for art at an early age. After graduating from Massachusetts College of Art, Burgoyne embarked on a career as an illustrator.

A member of the New York Society of Illustrators, he has received more than 100 awards in the United States and Europe including awards from Society of Illustrators, Communication Arts, Hatch Awards, Graphis, Print, One Show, New York Art Directors Club and Clio.
