Iced Black Tea

Tea is one of the most widely consumed beverages in the world and here in the United States, over 80% of the tea consumed is iced so we knew we needed to master a recipe. For a brisk and refreshing iced tea, we skipped lower-quality bagged tea in favor of loose-leaf tea. We brewed it with boiling water to extract the aromatic compounds from the leaves, then we cooled the extraction with ice water but did not strain it. By steeping the tea for an hour at this lower temperature, we could draw more flavor from the leaves without pulling out too many bitter compounds. We offer exciting flavor variations using fruits, herbs, and spices.

Hibiscus tea has a tart, cranberry-like flavor and is used in many different herbal tea blends as well as on its own. Our goal was a fruity, refreshing nonalcoholic beverage that would go down easy at an outdoor party on a hot summer day. We started by brewing hibiscus tea using our favorite room temperature brewing method. We then sampled the tea mixed with every variety of fruit juice we could imagine and settled on the sweet, mildly tart taste of guava nectar as the winner. A mint syrup both sweetens the tea slightly and brings an herbal lift to the flavor.

Reminded of the ice-cream truck staple, we wanted to replicate this treat in a smoothie with healthful ingredients. One whole orange provided us our classic citrus flavor, while a carrot delivered some sweetness, bulk, nutrients, and a distinctly orange hue. We mixed yogurt and a peeled banana which greatly enhanced the overall velvety texture of our smoothie and provided some milky sweetness that melded with the orange. A touch of vanilla extract helped to balance the tang of the yogurt.
