Over the past 20 years, renowned illustrator John Burgoyne has produced more than 150 intricate, hand-drawn illustrations for Cook’s Illustrated magazine. Now, for the first time ever, America’s Test Kitchen is proud to partner with Mr. Burgoyne and offer a select number of fine art prints featuring this iconic artwork.

Root vegetables are exactly what you think they are: the edible root of a plant. While most root vegetables are cooked before being eater, a few are consumed raw-most notably, carrots. The white parsnip is similar in shape and sweetness, but, unless boiled or roasted, it has a woody texture that makes it unpalatable. Beets, in all their colorful forms, are very sweet and earthy. Parsley root is more commonly found in Europe than the United States and has the same muted flavor as its leafy green parts. Black salsify, or scorzonera, has a pale white interior that oxidizes readily and a delicate and sweet nutty flavor. Burdock root is used in many Asian preparations and has a mellow earthy flavor similar to artichokes and salsify. Both turnips and rutabagas are members of the Brassica family, which includes kale and broccoli. Despite its gnarled exterior, celery root, also known as celeriac, is prized for its silky texture when pureed and its ability to blend with other flavors.

About the artist, John

John Burgoyne was raised in Massachusetts, where he developed a passion for art at an early age. After graduating from Massachusetts College of Art, Burgoyne embarked on a career as an illustrator.

A member of the New York Society of Illustrators, he has received more than 100 awards in the United States and Europe including awards from Society of Illustrators, Communication Arts, Hatch Awards, Graphis, Print, One Show, New York Art Directors Club and Clio.
