JB Print Olives

Over the past 20 years, renowned illustrator John Burgoyne has produced more than 150 intricate, hand-drawn illustrations for Cook’s Illustrated magazine. Now, for the first time ever, America’s Test Kitchen is proud to partner with Mr. Burgoyne and offer a select number of fine art prints featuring this iconic artwork.

There are literally hundreds of different varieties of olives, but all can be categorized by two factors: their ripeness when picked, and the manner in which they are cured. Green olives, pickled before they are fully ripe, tend to have fruitier and somewhat lighter flavors, while ripe olives—which range in color from dark brown to purple to deep black—have deeper, more fully developed flavors. Most olives are brine-cured, which involves fermenting them in a strong salt solution. Others are oil-cured, a process that gives them a wrinkled appearance and a sharper flavor. As for particular names, olives may be named after their type of cure, their place of origin, or their actual varietal name. The most important thing to remember about these little fruits, though is that they vary wildly from batch to batch and year to year: Actually tasting them is the only proof.

ABOUT THE ARTIST

John Burgoyne was raised in Massachusetts, where he developed a passion for art at an early age. After graduating from Massachusetts College of Art, Burgoyne embarked on a career as an illustrator.

A member of the New York Society of Illustrators, he has received more than 100 awards in the United States and Europe including awards from Society of Illustrators, Communication Arts, Hatch Awards, Graphis, Print, One Show, New York Art Directors Club and Clio.
