Over the past 20 years, renowned illustrator John Burgoyne has produced more than 150 intricate, hand-drawn illustrations for Cook’s Illustrated magazine. Now, for the first time ever, America’s Test Kitchen is proud to partner with Mr. Burgoyne and offer a select number of fine art prints featuring this iconic artwork.

There are essentially two types of squash: summer and winter. What sets summer squash apart from winter squash is soft skin and tender, light-colored flesh. Summer squashes are harvested while still immature and can be eaten rind, seeds, and all. Crookneck squash and golden zucchini are two widely available varieties. Baby zucchini with blossoms are not only beautiful but also entirely edible. Pattypans, whether the familiar green, scallop-edged squash; the yellow sunburst; or the striped tiger eye, are sweet and firm-textured. The globe squash, also called ronde de Nice or round zucchini, is dense and heavy, and its nearly seedless flesh is juicy and meaty. Chayotes have a crunchy, pear-like texture and cucumber-like flavor. Unlike other summer squashes, they should be peeled before eating. The opo is an immature Asian bottle gourd with smooth, satiny flesh and a flavor akin to that of the white part of a watermelon rind. Beneath the ridged skin of the Chinese okra (also known as luffa) is very soft, spongy, mild-tasting flesh. Resembling a cucumber with bumpy skin, Asian bitter melon becomes more bitter as it ripens.

About the artist, John

John Burgoyne was raised in Massachusetts, where he developed a passion for art at an early age. After graduating from Massachusetts College of Art, Burgoyne embarked on a career as an illustrator.

A member of the New York Society of Illustrators, he has received more than 100 awards in the United States and Europe including awards from Society of Illustrators, Communication Arts, Hatch Awards, Graphis, Print, One Show, New York Art Directors Club and Clio.
