Cook's Illustrated Unframed Print: Teas

Over the past 20 years, renowned illustrator John Burgoyne has produced more than 150 intricate, hand-drawn illustrations for Cook’s Illustrated magazine. Now, for the first time ever, America’s Test Kitchen is proud to partner with Mr. Burgoyne and offer a select number of fine art prints featuring this iconic artwork.

Made from the cured leaves of the Camellia sinensis shrub, teas are categorized based on how they are processed. Oxidation determines the color of tea; in general, the more processing, the stronger the flavor. White teas like Silver Needle are made from young leaves that are minimally processed, giving them delicate character. Sencha and Jasmine Pearls are grassy green teas that are heated before they are dried and rolled. Matcha, a green tea powder, is whisked when brewed to make a frothy beverage. Genmaicha is green tea blended with toasted adn popped rice, giving it roasted notes. Jade oolong is lightly bruised ot produce partial oxidation, giving it a balanced flavor. English Breakfast and Earl Grey are full bodied black teas; the latter is blended with bergamot orange oil. Made from fermented leaves, Pu-erh yeilds a strong, smoky bres. Masala chai, a blend of black teas and whole spices, is often served with plenty of milk and sugar.
